This Roasted Cauliflower dish features caramelized onions and lentils, topped with a zesty lemon tahini sauce and toasted pine nuts & parsley. Inspired by a favorite dish from @pitajungle, it's a flavorful, healthy option perfect for dinner.
Chop the cauliflower into medium-sized pieces and set aside.
Chop the onion into long, thin pieces and add to a heated pan with olive oil on low heat. Let onions caramelize for about 30 minutes, gently moving them every 5-10 minutes.
In another pan, add lentils with olive oil and cook on low heat.
Spray cauliflower with olive oil and season with salt and pepper.
Cook the cauliflower in an air fryer at 400 degrees for 15 minutes, or bake in the oven at 425 degrees for 40 minutes, tossing halfway.
For the sauce, whisk together minced garlic, lemon juice, tahini, salt, and pepper. Slowly add warm water to reach the desired consistency.
Once the onions are caramelized, lentils are warm, and cauliflower is crispy, toss all three together in a bowl.
Add pine nuts to the pan with caramelized onions on low heat and toss until they brown.
Drizzle lemon tahini sauce over the cauliflower-lentil-onion mix and sprinkle with toasted pine nuts and parsley.
