Instructions

1: Crush pumpkin spice coconut cookies with melted coconut oil in a food processor.

2: Press 1 tablespoon of the mixture into the bottom of a greased mini muffin tin.

3: In a bowl, mix together organic pumpkin purée, canned light coconut milk, cinnamon and vanilla infused maple syrup, 1 egg, 1 egg white, keto collagen, arrowroot powder, and pumpkin pie spice.

4: Dollop 1 tablespoon of the pumpkin pie filling mix on top of the crust in each muffin tin.

5: Bake at 350°F for about 15-20 minutes.

6: Let them cool slightly before drizzling with pumpkin spice granola butter.

7: Store in the fridge until dessert time.
