A delicious charred cauliflower dish made with tahini, lemon juice, and topped with chopped dates and parsley. Perfect as a side dish or added to salads for extra flavor.
Cut cauliflower into medium-sized florets and toss in a bowl.
In a separate mixing bowl, combine tahini and lemon juice at a 2:1 ratio.
Add sea salt and pepper to the tahini mixture and whisk.
Pour the tahini sauce over the cauliflower and toss, reserving a little sauce for after cooking.
Place cauliflower in the air fryer at 400 degrees for 15 minutes, tossing halfway through, or roast in the oven at 425 degrees for 35-40 minutes, flipping halfway.
About 2-3 minutes before the cauliflower is done in the air fryer, toss in chopped dates. If using the oven, add dates 10 minutes before the cauliflower is done.
Once cauliflower is crispy, add to a serving bowl, drizzle with remaining tahini lemon sauce, and sprinkle with parsley and some more sea salt.
