Cacio e Pepe Potatoes au Gratin

1: Preheat oven to 375 degrees.

2: In a small bowl, toss together both cheeses, salt, and black pepper. Set aside.

3: Pour 1 tbsp of melted butter into the bottom of a cast iron skillet and swirl to coat evenly.

4: Arrange potatoes in overlapping circles in a single layer at the bottom of the skillet.

5: Drizzle the first layer of potatoes with 1 tsp of butter and sprinkle with 2 tbsps of the cheese-pepper mixture.

6: Repeat until the potatoes are used up, setting aside about 1 tbsp of the cheese-pepper mixture for later.

7: Lightly coat a sheet of foil with nonstick spray and tightly cover the pan.

8: Bake for 35 minutes.

9: Using oven mitts, press onto the foil to compact the potatoes.

10: Remove foil and bake for another 25 to 30 minutes, until lightly browned.

11: Sprinkle with the remaining cheese mixture and broil for a few minutes to get crispy on top.
